Assistant General Manager Bob’s Steak & Chop House

Position Description / Responsibilities

In this role, you are expected to follow, enforce, comply with, and adhere to all of Bob’s Steak & Chop House rules, policies, procedures, standards, and recipes at all times. You will assume all General Manager (GM) roles and responsibilities in their absence, working closely with the GM on labor and sales forecasting, assisting with budget preparation, cost controls, and their implementation. A strong familiarity with profit and loss (P&L) statements is required as you assist the GM with profitability and flow-through, and the ability to write action plans for controlling costs. You will ensure staff accountability and maintain direct operational communication with Human Resources and the Hotel GM. Responsibilities include management scheduling, PTO approvals, overseeing daily operations, and being responsible for the assigned shift while assisting in overall management and supervision as outlined in the manager’s job description.

You will check staff punctuality, complete environmental checklists for the dining room (ensuring music levels and lighting are at proper levels), spot check liquor pars, order daily supplies, and hold pre-meal meetings. Following up on established training steps, handling guest comments and complaints, and ensuring guest satisfaction are crucial, as is staying on the floor during peak hours to communicate with guests and receive feedback. Observing, teaching, and correcting staff service, monitoring each guest experience, and examining food preparation and beverage presentation are also key duties.

Administrative responsibilities include assisting the manager in scheduling, weekly and monthly forecasting, and completing weekly payroll. You will participate in interviewing new employees, prepare maintenance requests and follow up, and manage cost control by monitoring food and liquor requisitions, food waste, and labor and payroll costs. Additionally, you will check bar controls, shot glass use, red lining, and ensure bottles are completely empty.

It is essential to be familiar with and adhere to all liquor liability laws, including the Dram Shop Act, which prohibits the sale/service of alcohol to intoxicated guests and minors. Knowledge of emergency procedures, including CPR, and working to prevent accidents is also required.

Position Requirements

The ideal candidate will have at least two years of restaurant management experience, with a strong preference for those with upscale steakhouse management experience, although other fine dining and hotel food and beverage leadership experience will be considered. The candidate must demonstrate proven leadership skills, with the ability to train, develop, and motivate staff. They should be capable of teaching employees the importance of interacting with internal and external guests and resolving internal requests courteously. The candidate must train staff to produce high volumes of work while maintaining quality according to Omni and Bob’s standards, set priorities for the team, and provide feedback that enhances performance. Prior experience in managing schedules, payroll, service recovery, and associate relations is required.

Excellent verbal and written communication skills in English are necessary for interacting with guests, management, and co-workers, both in person and over the phone. The candidate must be proficient with computers and able to multi-task and work efficiently in a fast-paced environment. They should possess strong organizational skills, handle high volumes of orders and guest requests under pressure, and provide prompt guest follow-up. The candidate must either possess an unexpired State of Tennessee Alcoholic Beverage Commission server permit or have the ability to obtain one. They must be available to work a variety of shifts, including weekends and holidays, and be physically capable of moving, bending, lifting, carrying, pushing, pulling, and placing objects weighing up to 40 pounds without assistance. Additionally, they must be able to stand or walk for extended periods or for an entire work shift, perform repetitive motions, and be willing to work both indoors and outdoors.
